Ales

Ales are brewed using yeast that tends to gather toward the top of the fermentation tank during the brewing process, and tend to be more flavorful, noted by fruit flavors, and are more robust and complex beers than a counterpart, the lagers.  They may also be characterized by a strong bitter note, or IBU.
